Steam Beer (also known as California Common) is a type of beer with origins in 19th century California. It is a low fermentation beer that is fermented at relatively high temperatures (higher than other low fermenting beers) and is then left to mature at lower temperatures. This production method was common in 19th century California, where the lack of ice and the limited availability of refrigeration equipment made it difficult to produce low fermented beers using traditional methods. Hence our desire to produce a beer with a very simple recipe: Pilsner and Vienna malt, German hops and Lager yeast fermented at higher temperatures. A blatantly simple, delicate and deliberately counter-trend beer compared to the trends of our times.
